IMPORTANT SAFEGUARDS

When using the appliance, basic safety precautions should always be followed including the following:

  1. Read all instructions.
  2. Do not touch hot surfaces. Use handles or knobs.
  3. To protect against electrical shock, do not immerse the cord or plug in water or other liquid.
  4. Close supervision is necessary when the appliance is used by or near children.
  5. Unplug from the outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.
  6. Do not operate the appliance with a damaged cord or plug or after the appliance malfunctions or has been damaged in any manner. Return the appliance to the nearest authorized service facility for examination, repair, or adjustment.
  7. The use of attachments not recommended or sold by the manufacturer may cause fire, electric shock, or injury.
  8. Do not use outdoors.
  9. Do not let the cord hang over the edge of the table or counter, or touch hot surfaces.
  10. Do not place the appliance on or near a hot gas or electric burner, or in a heated oven.
  11. Extreme caution must be used when moving the appliance containing hot oil or other hot liquids.
  12. Always attach the plug to the appliance first, then plug the cord into the wall outlet. To disconnect, turn any control to “off”, then remove the plug from the wall outlet.

Servicing should be performed by an authorized service representative. This appliance is intended for household use.

  1. A short power cord (or detachable power cord) is provided to reduce the risks of becoming entangled in or tripping over a longer cord.
  2. Longer detachable power cords or extension cords are available and may be used if care is exercised in their use.
  3. If a longer detachable power cord or extension cord is used:
    • a. The marked electrical rating of the extension cord should be at least as great as the electrical rating of the appliance.
    • b. The extension cord should be arranged so that it will not drape over the countertop or tabletop where it can be pulled by children or tripped over unintentionally.

The appliance is not intended for use by persons (including children) with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge unless they have been given supervision or instruction concerning the use of the appliance by a person responsible for their safety. Children should be supervised to ensure that they do not play with the appliance.

The following instructions apply to 120V only: This appliance has a polarized plug (one blade is wider than the other). To reduce the risk of electrical shock, this plug is intended to fit into a polarized outlet in only one way. If the plug does not fit fully into the outlet, reverse the plug. If it still does not fit, contact a qualified electrician. No no attempt to defeat this safety feature.

CAUTION AND HINTS BEFORE USING

  1. Use an outlet of more than 10 amps capacity.
  2. When no rice is in the inner container, avoid switching on the Mochi maker and running the impeller too long. It may cause trouble.
  3. Because the inner container is P.T.F.E.-coated, use a plastic or wooden rice scoop. Avoid using metal spoons, forks, or other tableware in the inner container.
  4. During, or immediately after, use of the Mochi maker, the lid, metal parts, inner container, impeller, and steamer are very hot. Avoid touching them.
  5. When heating the steamer without water, avoid water (whether hot or cold) immediately, steam may blow out dangerously.
  6. Avoid kneading mochi continuously with the switch set at the pound position. It may cause a motor trouble. (Use it again in 3 to 5 minutes after each use.)

HOW TO USE

PREPARATION OF RICE FOR MAKING MOCHI

  1. Selection: Rice should be round and uniform in grain size, bright and milk white in cold Mochi rice with non-alutinous rice. This is necessary for making tasty Mochi.
  2. Measurement: Measure the desired amount of rice with the measuring cup accessory supplied with this Mochi maker.

  3. Rinsing: Rinse the rice several times in a separate bowl until the water in the bowl appears relatively clear. Note: Raw rice accepts first-soaking best. Therefore, pour in the first rinse water, fully stir the rice, and then throw away the water immediately.

  4. Soaking of rice: After rinsing, soak rice in water for 6-12 hours. If soaking is not enough, the rice won’t be bright and glutinous. * Avoid soaking rice in water for over 24 hours. * Avoid soaking rice in water where it may freeze during soaking time.

  5. Draining: Before steaming, put the soaked rice into a bamboo basket and drain for about 30 minutes. If rice is not well drained, the Mochi may be too soft.
    • A bamboo or wire-net basket is recommended. If using a plastic basket, shake the basket before adding rice and make sure the water has been drained completely.
  6. Preparation:

  7. Pour water into the steamer: Volume of water for steaming:

  8. Mount the inner container: Lightly holding the inner container, turn it in the “SET” direction until it stops.

  9. Mount the impeller: To adjust the impeller hole to the motor shaft, mount it on the shaft until it stops.

  10. Put rice in the inner container: Shake rice in the draining basket to completely drain. Put well-drained rice in the inner container. Lightly level the rice by hand and put it on the lid. Take care not to press down the rice.

STEAMING

  1. Connect the power plug: Take out the AC cord and plug it into a 120V wall outlet.

  2. Steaming: Push the “STEAM” switch button. The power light will turn indicating the rice is starting to steam.

  3. The buzzer sounds about 35-45 minutes after the switch is pushed to announce the end of steaming. When the buzzer sounds, push the “OFF” switch. The power light will turn off. Remove the lid and check on the consistency of the rice. Pick up a little rice and check if it has elasticity and the grains can be crushed. If so, the rice is perfect.

POUNDING

  1. Push the “POUND” switch button without the lid after removing the lid. The rice in the middle starts moving.
  2. Rice pounds about 10 minutes:
    • Pounding too long makes Mochi too soft. Helpful Hint – Mochi Hardness Adjustment:
    • To make a somewhat hard Mochi Loosen steamed rice to let steam out, and then start pounding.
    • To make a somewhat soft Mochi When rice is pounded to about 70-80%, sprinkle water on the pounding Mochi.

  3. Take out Machi: Push the “OFF” switch button. Using napkins (or suitable cloths), hold the upper part of the inner container and remove the inner container from the body turning to the “LOOSEN” direction as shown by the arrow. Take care when handling as the inner container is very hot at this point. As shown in the drawing, take out the inner container, turn it over, and put it on the body cover. After a while, the Mochi comes down onto the body cover on its own. * As the impeller comes off together with the inner container, remove it from the Mochi. Take care as the Mochi and impeller are both very hot.

  1. Round Pieces of Mochi:
    1. Put flour on your hands and pluck off a handful of the Mochi from the smooth surface.
    2. With the lower palm flat, round the Mochi with another hand. 3 Spread flour on a flat surface to completely cover. Arrange the pieces of the Mochi leaving spaces between the pieces.
    3. You can finish Mochi more easily and neatly if you use the “TIGER MOCHI CUTTER”.

Flattened Mochi:

  1. Put water on hands, and flatten Mochi neatly and equally on the body cover making a smooth surface. Spread Mochi| quickly by hand. Work quickly and be careful as the Mochi| becomes too dry and hard to flatten.
  2. Scatter flour on the top surface of the Mochi and make Mochi flat rolling the rod across it. Leave it in a cool and airy place for one day. Take out Mochi from the body cover, and cut it into your desired sizes.

PRESERVATION

Mochi tastes best immediately after being pounded. It may be better to make Mochi when wanted. But if there is leftover, preserve it so that it won’t mold. (2-3 days at Room Temperature) To keep Mochi from growing moldy, put it in a place of low temperature and low humidity. Room temperature is generally high in winter due to heating.

It is recommended to eat all the Mochi in 2-3 days. If some Mochi is left, freeze or refrigerate it. If mildew has formed, scrape off the mildewed part and heat the surface of the Mochi by fire. (Freezing preservation for a large quantity of Mochi pounded) To preserve Mochi for a long period, cut into pieces and shape, or cut flattened Mochi to the desired size.

Preserve those pieces of Mochi by freezing. Mochi pieces put in a polyethylen bag and preserved in a freezer can be stored for at least a month. When serving the stored pieces of Mochi, unfreeze them at room temperature, or remove them from a bag and place on a dish and thaw by an electric cooking range. The Mochi pieces, even frozen as they are, can be put in a soup and boiled if time is short.

  1. Pour water into the steamer.
  2. Mount the inner container.
  3. Mount the steam plate and put food on it.
  4. Push the “STEAM” switch button.
  5. Put on the lid.
  6. The buzzer sounds after steaming. Then push the “OFF” switch button.

HOW TO CLEAN

Perform cleaning and maintenance procedures as described below. Any other servicing should be perfomed by an authorized service representative. After using, unplug the AC cord and then clean the lid, inner container, impeller, steamer, motor shaft and any accessory when the Mochi maker has cooled.

  • Remove the lid, inner container and impeller clean them in warm sudsy water, and rinse completely; then dry with a soft cloth.
  • Clean the outside of the Mochi maker with a clean damp cloth.
  • Never clean any portion of this Mochi maker with abrasive or harsh cleaners Simply use a damp cloth or sponge with water and mild dish detergent.
  • Never submerge any part of the Mochi maker other than the lid, inner container, impeller or any accessory in watar or any other liquid. * Steamer… Dampen the sponge with tepid water, wipe off dirt completely. Wipe the surface with a dry, soft cloth, to remove all moisture. Note that storing the apparatus with water inside the steamer may cause corrosion.
  • Motor shaft … Using a tightly wrung damp cloth, wipe away dirt completely. P.T.F.E. -coated inner container, impeller, and steamer (Hints to ensure against damage to the P.T.F.E. coating)
  • Do not use a metal scoop, spoon, or spatula.
  • For washing them do not use abrasives or harsh cleaners. Use a sponge or soft cloth.
  •  It is possible that in time with use the P.T.F.E. -coated surface becomes patchy with partial discoloration. This is due to the influence of water or steam and has nothing to do with the coating’s performance or its sanitary feature. You need not worry about it.
